Am I the only one that struggles with cooking for two? I am slowly but surely learning how to cut the ingredients in half it makes too much for Ben and me. So, this recipe only makes an 8x8 dish and can feed 2-4 people!
Today during the day Ben text me three words... Poppy Seed Chicken.... So I got the hint! :)
Ingredients:
- 3-4 chicken breast
- 1 can of cream of chicken soup
- 1 cup of sour cream
- 2 sleeves of Ritz Crackers
- 2 sticks of butter (I know, real healthy!)
- poppy seeds (I don't really measure this)
- and my "secret" ingredient .... GARLIC POWDER (I am obsessed)
Directions:
- Preheat your oven to 350 degrees.
- Melt the two sicks of butter. Crush the two sleeves of Ritz crackers. Mix both items with some poppy seeds and set aside for later.
- Boil your chicken. Normally, my water never gets to a boil before I take the chicken out. I let the outside of the chicken get white and the middle isn't cooked yet because I let it finish cooking in the oven
- Mix together the soup, sour cream, and some garlic powder, and the cut up chicken.
- In a greased pan put the chicken combination in first then put the Ritz crackers on top.
- Bake for 30 min.
I serve this over rice because it is more of a "soupy" casserole. We like the soupy kind more than the actual "sticky" casserole.
